Chengdu is where many visitors first get to know Sichuan food, with its chili heat, Sichuan peppercorns, and slow-building layers of seasoning. The flavor profile goes beyond simple heat: garlic, fermented bean paste, vinegar, and toasted spices all play a role, and most dishes are built around balance rather than spice alone. Rice is the main staple, while noodles and small snacks cover many quick meals across the day. For most visitors, the most useful thing to know upfront is that spice levels vary widely by dish, and the numbing quality of Sichuan peppercorn is often more surprising than the heat itself.
